1 | teaspoon | salt | |

1/2 | teaspoon | ground black pepper | |

1. Preheat oven to 400 degrees.
2. Lightly coat large skillet with cooking spray.
3. Add onion and celery to skillet.
4. Place skillet on burner and turn to medium heat.
5. Cook vegetables until tender crisp, about 3 minutes.
6. Stir in rice, broccoli, soup, 1/2 cup cheese, sour cream, salt and pepper; mix well.
7. Turn burner off. Remove skillet from heat and place on hot pad.
8. Lightly coat 1 1/2- to 2-quart baking dish with cooking spray.
9. Spoon rice mixture into baking dish.
10. Place rice mixture in oven; bake 35 minutes.
11. Remove rice from oven and top with 1/4 cup cheese.
12. Return rice to oven and bake 3 minutes longer, or until cheese melts.
13. Turn oven off.
14. Remove rice from oven and serve.
